Vegan food is delicious and I know more people than ever before are looking into the vegan lifestyle these days. Some people want to transition 100% and other just want to reduce their meat intake. I think it is great that people want to eat more fruits and vegetables, both for their own health and ethical reasons! However, I know it can be hard to know what to eat when transitioning into this lifestyle. Many people believe that they have to give up all of their favourite food, but that is not necessary. I can guarantee you that a lot of the food you already eat is vegan. Did you for example know that Oreos are vegan? One thing I can promise you is that there is so much more to veganism than salads and there is tons of quick and easy recipes out there. Today I wanted to share with you one of my go to recipes that I have been making a lot lately. It is sweet, salty and creamy. Just how I like it! (Psst.. it only takes about 15-20 min to make).
WHAT YOU WILL NEED:
5-7 medium sized potatoes
1/2 sweet potato (or more if you would like it sweeter)
500g green peas
As much fresh ginger you would like
1 tbs vegetable broth
HOW YOU DO IT:
Step 1. Cut the potatoes and ginger into squares (the smaller they are, the faster they will get soft). Have the potatoes, ginger and the vegetable broth in a boiler. Fill it with so much water that it covers all of the ingredients. Bring to boil and let it boil until soft (approximately 10 minutes).
Step 2. Right before the potatoes are done, put the frozen peas in the boiler together with the potatoes and let them become warm all the way though (approximately 2 minutes).
Step 3. Take the boiler of the stove and use a hand blender to blend all the ingredients together. Add salt and pepper to taste.
It is really just that easy! I would recommend to let it cool of a little bit before you eat it, but it is not necessary. This recipe gives you a big batch of soup so I usually put what I do not eat in the fridge and eat it the next day.
