Exciting Announcement!

Some of you might have noticed that I haven't been blogging for a while, and I am now happy to reveal the reason why..

I have been busy creating a new and better blog!

I can't even begin to describe how excited I am!

You can visit my new site HERE.

How beautiful is this? Yesterday, I went to this place together with a few friends and Marius. It was my first time there, but I have been wanting to go for so long! I have seen so many pictures of this heart shaped rock pool before, but I didn't know where to go. The only thing I knew was that it was somewhere in Beechmont.. But our friend Blake is from Beechmont, so when I asked him about the heart pool he did know exactly where to go! It was such a beautiful place and I'm glad we went! The only down side have to be that it was very crowded.. I know it seems like a secret place in the pictures, but it was definitely not secret.. We went there a little bit late and after a while it started to rain a little bit, so luckily everyone besides us left and we go the place to ourself! How did you spend your Sunday?

Seriously guys, how good does this look? These pictures pretty much sums up my night! Who said it's hard to be vegan? These pizzas tasted just like the real deal, if not even better! Last night was my first time trying vegan pizza with vegan cheeses and meats, and I have to say that I actually was suprised of how good it tasted! If you read this and live on the Gold Coast, you should defaintly check out Feed the Earthlings! That's where we got these.

This is not something I usually post on my blog, but I just felt like I had to share it because a lot of people that I have met think that vegans can't eat any junk food at all - which simply isn't true!

Yesterday, I did some editing as usual and that's when I came across these pictures. I never posted them here on my blog, so I felt like I wanted to share them with you now! Marius and I took these a few months ago in Miami (Yup, there is actually a place here on the Gold Coast). Miami is such a beautiful place and the view from this hill (rock?) is insane! We had to climb a few fences to get to the tip.. I have to admit that I was a little bit afraid I would fall down because it was so windy! But I was very careful, so it wasn't that scary, haha! And when I see the pictures no, I think it was worth it!

Hi guys, how are you today? On a scale from 1-10, how good did my breakfast look? Pretty good, hey? I got a box of mangoes for only 10 bucks the other day, so I have been eating mangos ever since! As I'm writing, I'm actually at uni. I had classes until 3pm and since then I have just been editing pictures and done some things that needed to be done, haha. I'm about to head home any minute now and I can't wait to get some food into my belly!

Today I met up with Sonja at uni to shoot some outfit pictures. The weather has been on and off all day, but luckily we got to take some pictures when it wasn't raining! Lately, I have been loving high-waist skirts. I think a high-waist skirt always look good and they are super comfy! I like to dress up a little bit, but because of the heat I don't feel like dressing up too much - especially not when I'm running around all day! So on days like this, a high-waist skirt and a basic tee is all I need!

"And above all, watch with glittering eyes the whole world
around you because the greatest secrets are
always hidden in the most unlikely
places. Those who don't
believe in magic will
never find it."

This morning I found myself looking through some of the pictures I have been taking over the last year, and that was when I stumbled over these pictures from one day Marius and I spent in Burleigh. I absolutely love them, especially the last one of Marius hand! I usually always bring my camera with me, and I have to admit that sometimes I feel a little bit awkward when I am pulling it up from my bag to take some pictures, but you know what? It's worth it! It makes me so happy that I am able to go "back in time" and review something that have happened in my life. Most of the times when I take pictures, it's not of a special moment or anything like that, but it's weird, because when I have a look at them maybe a year later, they feel so special to me! Anyone that feels the same?

How beautiful is this place? Even when it's raining it's beautiful here! When I got home from uni today, I just had to take some pictures from the balcony. The sky looked so dramatic and for some reason the water was looking extra blue. I have no idea why, but maybe it was the contrast from the grey clouds that made it look even more blue?

Since I got home I have just been working on some pictures and drinking tea. I love tea, especially when it's dark and stormy outside! I think I will spend the rest of the evening editing pictures and having a read through the assessments for this semester. The time flies so I feel like it's good to get started right away so I won't have to stress too much! What are you guys doing tonight?

Today is the 1st of March, which means that it's oficially autumn here in Australia, and the weather today is definitely a reminder of that as well! It's been pouring down since I left the apartment this morning, and it doesn't seem like it's going to stop either.. I actually don't mind though, because I'm spending my whole day at the University anyway! Today was my first day at uni since the end of October, and I have to say that it was good to be back! It seems like I'm going to have a lot of different and fun courses this semester, and I can't wait to get started! It's so exciting to actually study something you are passionate about and do things you enjoy!

Right now, I have a one hour break between my classes, so I'm just taking my time to eat a little and relax before my last class starts at 5 pm. We still haven't fixed the internet in our apartment, so it's good to be here and get some time to catch up on some blog readings as well. Haha! How's your day going so far?

Good morning!

Are you ready to make the best out of your day? I am, but first I need to relax a little with a cup of tea and some blog reading! This is my last day of holiday before I get back to the University, so I will try to get as much out of the day as possible. I didn't run my usual long distance run yesterday since I went to Brisbane, so I will start of my day with that. Then I have scheduled some blog planning and planning in general, before I head out to meet with the acting team (I don't really know what to call it..).

(doesn't happen too often..)

What's your plans for today? Are you studying, working or do you have vacation as well? Tell me, I want to know!

Today, I have been in Brisbane together with Marius. Marius was playing a concert there together with some friends, and I really wanted to go there with him so I could see them play and take some pictures of them. I love the fact that Brisbane is so close to the Gold Coast and that it's so easy to get there (even though it take a while with public transport..). Brisbane has everything you could ask for and it's completely different from the Gold Coast. Here people walk barefoot inside the shopping centers, but in Brisbane I see so many people that are dressed up so nicely. I don't really understand how they do it though, because it's still sweating temperatures..

Another thing I wanted to tell you guys is that I actually got a call back from yesterday's audition. I had never expected that at all! But suprisingly it happend, haha. So I'm going back there tomorrow to have a chat with them. I have to say that I'm actually a little bit excited! How's your day been so far?

You know what? I feel like it's time that you guys get to know me a little bit better! I love to post pictures and write here on my blog, but I feel like I tend to write a little bit unpersonal.. So I thought, why not share a few fun facts about me with you!

Let's get started..

>> I love to hike and be outside in the nature all by myself and just think. I'm such a big philosopher and I think about all kinds of stuff. It's not like I'm worried about something or anything like that. I just like to think about everything.

>> I used to be really shy when I was younger, but it was something that really bothered me, so I started to challenge myself to be more outgoing and I think it worked pretty well because I'm not shy anymore!

>> When I was younger I used to compete in rabbit show jumping. No joke! Me and my friends got really into it and made our own club, arranged competitions and got our parents to drive us around to all these rabbit shows..

>> I also used to compete in equestrian. I started riding horses when I was 5 years old and quit right before I turned 17. My last pony died and after that I felt like I needed a break, because it really broke my heart..

>> My second year of High School I moved to the US to do an exchange year there, but I had to move back to Norway after only a few months because I got ill..

>> Even though I went to High School in the US and now are studying in Australia, English was never my favorite subject in school and I found it really hard. I was always so afraid to speak English in class because I felt like the other students and the teacher were judging me, but when I started to travle I didn't feel embarassed at all because I knew that as long as people could understand me they would be impressed!

>> I'm vegan and I have almost been for two years already. My anniversary is in May!

>> I barely eat candy and junk now, but I used to be the biggest sugar addict ever! I'm pretty sure that my diet was like 90% candy and 10% real food..

>> I'm super silly and I don't feel like I'm 21 at all. When people ask me how old I am, the first number that pops into my mind is 17. Guess I'm a little bit denial..

>> I'm obsessed with lace and my dream is to have a closeth full of withe lace dresses, tops and skirts. I seriously can't think of anything more beautiful!

>> I'm super afraid of fish and I freak out if I see a fish when I'm swimming. The suprising thing is that I haven't seen a single fish when I have been swimming here in Australia, and I'm not just swimming in the pool..

Another Thing to Cross off My Bucket List

Okay guys, today I have done something I was sure I would never ever do in my entire life and I know that no one would have a chance to guess it either. It's not like me at all, so I'm just going to say it.. I have been on a audition! Haha, life is about challenging yourself right? It's not like my biggest goal in life is to become and actor, but I really wanted to see for myself how it was and if I actually could push myself to do it. It was definitely a fun experience to have and I feel like I learned a lot. I know that I messed it up a little bit and I had a hard time being serious, because everytime I get a slight bit nervous I tend to smile.. But I did it and I'm pretty proud of myself!

After the audition I met up with my beloved photographer, Sonja. We chatted for a while and took some pictures by the beach before I had to head home. At the moment I'm sitting all by myself at Uni. We don't have internet in our new apartment yet and it's killing me.. Hopefully we will get it before the end of this week! How has your day been so far?

I have been having a look through some of the pictures I have taken since I moved to Australia last February and I thought, why not share a few of them with you! I have to say, Australia got to be the most beautiful place I have ever been. I have travelled a lot, but I have never seen water as clear and blue, or sand as fine as here. So far I have only been on the east coast and I can't wait to explore the rest of this country! I'm so happy that I still have two years left here, because there is so many places I want to see! I really want to see Sydney and Melbourne, but I would also love to see how it is a little bit further away from the coast. I would actually love to work on a farm for a few weeks and I was thinking that I might do it over the easter break. Have any of you guys done farm work in Australia before? If so, let me know how you liked it!

Today, I had to do a few errands in Surfers Paradise, so since I first was there I met up with Sonja to take a few pictures. Sonja is such a good photographer and it's so fun to work with her!

Right now, I'm sitting on the couch and watching Modern Family. Nothing makes me laugh more than that serie, it's so hillarious! I don't have too many plans for tonight. Marius is working, so I was thinking that I might make myself something good to eat and just edit some pictures and watch TV. What are you guys doing tonight?

Words can't describe how happy I am with our new apartment. I mean, look at this view! Yesterday, we officially moved in and I have to say that it was a little bit surreal to wake up this morning to the sound of the ocean. I had to pinch myself in the arm to be sure I wasn't dreaming! I have been sitting on the balcony since I got home this afternoon. The ocean is so beautiful, it's almost like the waves are hypnotizing you, and the sound of the ocean moving is so relaxing. No wonder why I slept so well last night!

Now, it's almost time to jump into bed to watch some episodes of Modern Family before I fall asleep. I don't have too much planned for tomorrow, but I think I might take a little trip to Uni. I'm pretty excited to start again on Tuesday. Vacation is great, but I feel like I have had enough of it for a while now..

I hope everyone is having a great day/evening, depending on where about in the world you are right now!

Hey guys, how are you? At the moment I'm sitting on the couch, exhausted from a long and busy day. I started the day of with an intense workout consisting of intervals and outdoor strength training. I felt that I managed to push myself really hard today and that makes me so happy, haha. The small things in life, you know! I have used the rest of the day to pack and move my things over to the new apartment. I'm so excited to move out tomorrow! I love our new apartment and I can't wait to get settled there! I really don't have much to say today, but I just wanted to check in with you. I hope everyone is having a great Tuesday so far!

Apartment With a View

How amazing is this view! On Wednesday we are moving into this apartment and I can barely wait! Marius and I went over there today with most of our stuff, and we will do another round tomorrow so we can use the last day to clean out our current apartment. The apartment is located only a few hundred meters away from the apartment we have been living in for the last six months, but since our lease is up, we really wanted to see if we could get an apartment even closer to the beach - which we did, yay! Most of the walls in the apartment is glass walls, so we have almost 360 degrees view. We even have glass walls in our bedroom facing the ocean! I can't wait to wake up to this view every day!

Okay guys, I have to share an amazing recipe with you! I honestly never bake, but today I was craving brownies so bad! I don't think I have had brownies or anythink like that in maybe a year or so, and since I have been feeling a little bit sick today (that time of the month, you know..), I really felt like I deserved it! I searched a little bit around to get some inspiration and after a while I came across a recipe were they used chickpeas instead of flour. Yup, that's right - CHICKPEAS! It sounded so weird that I just had to try it, and you know what? It was seriously one of the best brownies I have ever had! Marius even liked it and we couldn't taste the chickpeas at all! So why don't we just get into the recipe?

1 tin of chickpeas

1 cup natural peanut butter

1/2 cup coconut sugar (any kind will do!)

2 tbsp vanilla essense

1/2 tbsp baking powder

1/2 tbsp baking soda

a pinch of sea salt

as much chocolate chips as you want!

1. Preheat the oven to 180 degrees.

2. Mix all of the ingredients besides the chocolate chips and the sea salt in a food processor.

3. Mix in the chocolate chips with a spatchela (use dark if you want it to be vegan).

4. Spred the dough onto a baking paper and sprinkle some sea salt on the top of the cake.

5. Pop it in the oven for about 20-25 min. It will probably look a little bit raw when you take it out, but if you have it in the oven for too long it will become really dry. Just let it cool down a little bit before you eat it and it will be perfect!

.. And that's it! It was such an easy cake to make and it went pretty quick as well! This cake is vegan and glutenfree, which I think is pretty amazing! We ate it together with SoGood Vanilla ice cream (it's vegan) and it was so so good!

Let me know if you try out the recipe!

Breathe Out

Yesterday, I had a few hours by myself in the apartment, so after working on a few projects, I felt like I deserved some me-time. I cut up some fresh vegetables, found my current book and laid down for a while on the balcony. It seriously felt so good! I have been very stressed lately because I'm currently looking for a job and it seems like it's not that many hiering at the moment, so it felt really good to just breath out, dive into a book and forget about the real world for a while. Reading really helps me relax. I fall asleep so easily after reading only a chapter or two. So if you are going through something at the moment, you should really try to find a quite place where it's just you, and try to read a little. It's like theraphy!

Good morning! I just wanted to check in with you guys and give you a little tip before you start your day. Lately I have been drinking a shot of Apple Cider Vinegar in the morning before breakfast. I have done it every day for about a month now, and I'm already feeling the benefits from it. Apple Cider Vinegar is said to help against things like acne, innflamation in the body, the digestion and much more. It's also said that it helps balancing th pH levels in the body. For a long period of time I have been struggeling with acne, so after reading a little bit about it I decided to give it a try. Now a month later I can clearly see a big difference in my skin! It's starting to smooth out and I barely have any pimples anymore. The redness is almost gone and my acne scars is clearing up. I don't know if the Apple Cider Vinegar is the only reason why my skin is clearing up, because I have also done a few changes to my skin care routine, but it has defaintly helped me a lot! I know a lot of people struggle with acne so I felt like I had to share this tips with you!

A few years ago when I first started running, I made a huge mistake.. I thought I should start running because I had heard that it was really good for you and that it was a good way to get in shape. I had never really been into any other sports than equestrian before that, and I had absolutely no idea of what I was doing. The only thing I thought I knew was that I should try to run as long as I could before stopping. I also knew that I had to wear some kind of gym shoes, but I didn't really think that it mattered what kind of gym shoes it was. I thought all gym shoes were equal. Guess I was wrong.. After running for only a few weeks in my old gym shoes that I had from secondary school, I started to feel that my legs were protesting. Whenever I was running I got really bad pains in my chins. The pain became so bad that I started having problem walking normal, so I figured out that I had to take a little break. It took maybe a few weeks to the pain was gone so I could start running again. But the problem was that whenever I started running again, the pain came back only after one or two runs. At that time I was so uneducated that I couldn't find any solution to the problem. Therefore, I concluded that my body wasn't made for running and stopped doing it.It wasn't before my mom re-introduced me to running around two year ago that I found the real cause of the problem. It wasn't that my body wasn't made for running, the problem was my shoes! After seeing a specialist I found out that I'm overpronating. Overpronation is when the foot rolls in excessively, or at a time when it shouldn't. Over time, overpronating can lead to a lot of different injuries. Chin splints is one of them, and it's also what I struggeled whit for quite some time. My first pair of good running shoes was a pair of Mizono shoes. They felt like a dream compared to my old shoes and they were actually meant for running, something my old gym shoes wasn't. Since then, I have tried a few different brands and models and I have found myself a favorite pair of shoes - Asics Gel Kayano! I have had four pair of them already and I don't think I will buy another brand or model before they stop producing these. They are the perfect shoes for me and I haven't felt any pain in my legs since I started using this model. I have to say that I don't think they are the best looking shoes on the marked, but that isn't why I bought them either.

My best recommendation for someone that is new to running, is to stop caring about how the shoes look and start focusing on how they feel on your feet! I see so many people running with shoes that look great, but obiously isn't hade for running. The worst thing is see is when people are running in Nike Air shoes or something simmilar. Those kind of shoes are alright if you run maybe once a month on soft ground, but not if you run often on concrete like most people do. I have a rule and that is that I can wear cool and good looking shoes when I go to the gym, and functional shoes when I'm running. It's so important to take care of your body before it's too late! So next time you are buying a pair of running shoes, talk to a specialist that can help you find the perfect shoe for you, so you can run happily ever after!

How cool isn't this workout outfit from Nike? I absolutely love it! This sweater is defaintly one of my absolute favorites! I'm kinda looking forward to the Australian winter so I will be able to wear it much more often. Longsleeves is a little bit too warm here in the heat.. I'm sure it's been around 35 degrees today and the humidity has been insane! It cooled down a little bit in the afternoon though, so I finally got a chance to put on this outfit!

Lately, I have been thinking a lot about which direction I want to go with my blog and I think I finally have made up my mind. I'm not hundred percent sure yet and I haven't planned everything, but I'm sure about one thing, and that is that I will put way more effort into this blog than I have done before! So stay tuned - a lot of changes is about to take place!

Happy Valentines Day everyone! Haha, I have never really celabrated Valentines before, but I just felt like wishing everyone a happy and romantic day anyway! I just got back from a little Acai bowl date with Jasmine in Broadbeach. For me, Sunday's equals Acai bowls. Since I came back from Norway I have been doing long distance runs on Sundays, so it's kinda like a little treat for myself after a long run. It has been really warm and sunny today. It's been around 30 degrees and not a cloud in the sky, so you can probably imagine how it felt to run 18 km? I was so exhausted when I came back home and an Acai bowl have never tasted better! Tonight, I'm heading to Brisbane with Marius. He is having a gig there and I can't wait to see him playing again!

Gipsy Picnic

This is how I spent my afternoon today. Summer, Nicole and I went up to a place called Beechmont. It's a tiny tiny village on top of a mountain, which is located around 45 minutes away from the coast. It's so beautiful there and it has the best view! I didn't get any proper shots of the view this time, but I will next time! We arranged a little picnic and brought some food and snacks. I made Japaneese sweet potatoes and guacamole, Summer made Oreo cupcakes and pasta, and Nicole brought popcorn and chips. We sat there for hours and just talked about everything. I had such a good time and it was the perfect spot to watch the sunset. It was magical! I love days like this!

I'm so full and tired right now, but we are having an inspection in the apartment tomorrow, so I have to clean up the place a little bit. I'm not so motivated, but you gotta do what you gotta do, right? Haha..

Sweet & Salty

Hello guys! Today I want to share another healthy vegan recipe with you. I have been obsessed with stir fry lately, so you can guess what kind of recipe I will show you today? Yup, you're right - it's a stir fry recipe! I love stir fry because it's so quick to make, it's tasty and it's super healthy! A lot of people use a lot of oil whenever they make stir fry, which isn't very health, but don't worry - this is an OIL-FREE recipe!

Approximately 6 servings.

400-500g Mushrooms

4 Medium Carrots

3 Onions

1 Capsicum (green, yellow, red or orange - it's up to you!)

4 Medium Zucchinis

1/2 Sweet Potato

1 Piece of Ginger

1 Box Chickpeas

1 Box Lentils

500g Brown Rice

Soy Sauce

Sweet Chili Sauce

1. Put the rice in a boiler and fill it with water. You need to fill it with so much water that there is around 2 cm more water than rice. Let it boil for a few minutes, turn down the heat and put a lid on it. Let the rice soak until its soft, but not too soft.

2. Cut all of the vegetables (besides the sweet potato) and put them in a big stir fry pan. Don't forget to cut some ginger and put in together with the veggies!

3. Pour a dash of soy sauce and a little bit bigger dash of sweet chili sauce over the vegetables and turn on the heat. When you have the sauce in the pan together with the veggies, you won't need any oil! Just remember to stir them. They are probably done after 5-10 min. They shall be tender, not super soft!

4. Cut the sweet potato into squares and put them in a boiler together with water. Cook until tender.

5. Rinse the lenses and the beans with water, then let water drip of.

Voila - you're done!

This recipe is super easy and it fits good for everyday food. I usually make this, eat one serving and divide the rest into lunch boxes so I have food for a few days. I love to always have some healthy food close by in case I suddenly get super hungry! It's so much easier to stay healthy when you are prepared. I like to say: "prepare for success or prepare for failure". By failing to prepare, you actually set yourself up for failure.. So if your goal is to get fit or to eat healthier, meal prepping is a good idea!

I hope you liked the recipe and leave a comment if you want me to continue writing posts like this! I love cooking and I feel like this is a good place to share my creations from the kitchen. Let me know what you think!

My Latest Obsession

This is why I usually get up one hour before I have to in the morning! I love (read: need) to relax a little bit before my day officially starts. A bowl of oatmeal made with rice milk, topped with a hand of berries is seriously the best breakfast I know. It's the perfect addition to any morning. It's healthy, super yummy and it's filling without being too heavy for my stomach. Until recently, I have always made my oatmeal with just water - even before I went vegan. I have never really enjoyed cows milk and I didn't know about any other alternatives. When I went vegan I found out that it's actually heaps of other options like rice milk, almond milk, soy milk, oat milk and probably many more. Since milk never really have been a part of what I eat, I never missed it after ditching animal products, but I wanted to try some of the vegan milks just to see what they tasted like. I have to say that not all of them appealed to me, but when I tried rice milk I knew from the first sip that this relationship was going to last! When I buy rice milk I buy the one without any added sugars, but it still taste super sweet and delicious! I got my boyfriend to try it as well and I think he is just as in love with it as I am. The other day he bought a liter carton and drank it in one night. So if you haven't tried it yet, my suggestion is that you buy it the next time you are at the grocery store! It cost about 2.50 bucks here in Australia, which equals around 15 NOK. So you have nothing to lose!

Ocean Lookout

This is where Sonja and I sat and watched the sunset yesterday. How beautiful is this spot? I discovered this lookout together with Marius a few months ago and I still get goose bumps whenever I go there. There is something about the ocean. I can sit and stare at it for hours. It feels so surreal that it's something behind the horizon, because when you sit and look at it, it's like it just ends right there - where the sky and the ocean touch.

How are you guys? I don't know why, but for some reason I'm super tired today.. I had to get up at 6am this morning to go to the gym and it was so hard to get out of bed! It felt like my body was glued to the bed, but even though the odds was against me I got to the gym on time! Recently, I have been training at a gym in Burleigh tree times a week. I have semi-sessions together with a few gorgeous girls and it's so fun, but oh man - it's exhausting! Every time I leave the gym dripping. It feels so good after though!

Since I got back from the gym, I have been editing pictures and prepared some blog posts for the next few days. Sonja took these pictures of me yesterday in Miami. I feel so weird every time I write about 'Miami' here on the Gold Coast, because I feel like everyone thinks that I'm talking about Miami in Florida. It's strange because there is actually a lot of places here on the Gold Coast that is named exactly the same as famous places in the US. I don't know it's on purpose or just a lack of creativity, but I think it's a little bit funny.

Hey guys!

Here is a little sneak peak of what I have been up to today. Sonja and I went out on a little photo adventure earlier today and I'm so excited to show you the rest of the pictures, but you will have to wait until tomorrow.. I'm so tired and exhausted that I can't bear to edit any pictures right now.. I have been walking so much today and it has been so warm! Not that I'm complaining about the weather, but it's exhausting in the long run when you have a lot to do. I hope everyone is having a good day/evening, depending on where about in the world you are. I'm about to get ready for bed here in Australia, but first I'm watching an episode of Friends on the TV and having a little snack.
